Festive Chia Puddings
Looking for something easy, fast
and healthy to tide you through the busy holiday season? You can’t go past
these quick and easy puddings, ideal for a hot summers day!
Ingredients (makes 2)
– 1 cup of chia seeds
– 2 cups of reduced fat soy milk
(or other plant milk of your liking)
– 2 tablespoons rice malt syrup
– cherries
– 2 tablespoons of peanut butter
Method
– Grab two empty jars with lids,
add half a cup of chia and one cup of milk to each jar. Put the lid on, shake well, and leave in
the fridge overnight.
– The next day, top the thickened
puds with a tablespoon of rice malt syrup and peanut butter, then a small
handful of cherries. Best eaten straight from the fridge!
